
SHAO CHAZA
Ingredients
A few fresh eggplants (medium size)
- Minced chicken meat 150 g
- Soy sauce 1 tsp
- Eggs 2
- Minced ginger 1 tbs
- Salt to taste
- Black pepper ½ tsp
- Ajinomoto (Chinese salt) ½ tsp
- Flour 1tbs
- Corn flour 1tbs
- Oil for frying
Method
- Mix all spices with one egg yolk to the minced meat.
- Wash and pat dry the eggplants, and slice them.
- Slit each slice to the end.
- Fill the slit with minced chicken mix and press gently.
- Beat one egg and the remaining egg white.
- Add a spoon of flour, corn flour, a pinch of salt, and ajinomoto, to make a paste.
- Dip each eggplant “sandwich” into this batter and fry.
- Serve at once while hot.
